The three main proteins in donkey whey are α-lactalbumin, β-lactoglobulin and lysozyme. Recent studies show that α-lactalbumin has antiviral, antitumor and anti-stress properties. Moreover, it has been proven that α-lactalbumin works as an anti-inflammatory by inhibiting cyclooxygenase-2 (COX-2) and phospholipase A2.

One of main allergens in children is β-lactoglobulin, which is also the main protein in cow whey. In donkey milk, the presence of β-lactoglobulin is very low, when compared to cow milk.  This may be somewhat related to donkey milk being considered hypoallergenic.

Also, the high content of lysozyme may be responsible for the low bacterial concentration in donkey milk. The concentration of lysozyme in breast milk increases significantly after the second month of lactation. This enzyme has an important role in helping fighting infections in babies who are breastfed for longer.
