The three main proteins in donkey whey are α-lactalbumin, β-lactoglobulin and lysozyme. Recent studies show that α-lactalbumin has antiviral, antitumor and anti-stress properties. Moreover, it has been proven that α-lactalbumin works as an anti-inflammatory by inhibiting cyclooxygenase-2 (COX-2) and phospholipase A2.

Casein is, without a doubt, a protein with high organic value. It is also highly nutritious, thanks to the amount, variety and proportion of essential and non-essential amino acids. The high concentrations of glutamine, especially in the form of peptides, are highly advantageous to preserve muscle mass, be it for people who preform intense workouts, for people who are one a diet to lose weight or for those who, for some reason, are experiencing a dietary restriction.

Donkey milk as a lower fat content, when compared to breast milk and has, therefore, a lower energy content.  The high content of fatty acids in donkey milk makes it one of the most complex sources of natural fats and, consequently, one of the most complete ones. In a well-balanced and complete diet, donkey milk is a good source of essential fatty acids.

This category of fatty acids is very in important in the diet of patients who are allergic to cow milk, especially if they also have other food allergies.
